Dembi is a processing center located in Sidama Ethiopia. Many farmers contribute their coffee, this coffee consists of the best lots of the harvest. The higher elevations, causes the growth of the coffee to slow down. This extended maturation process yields more complex and flavorful cups.

  • Processing

These beautiful and complex flavors are intensified by the anaerobic fermentation process. Coffee cherries are sealed in airtight temperature controlled tanks for 7 days until the pH level drops to 3.8 to get the desired profile of winey fruit, and rich florals. They are then shade dried for 18 days to slow down the drying process and increase fermentation.
